Apricot Fruit Cake

 

 

200g (7oz) S R Flour 

Pinch of salt

110g (4oz) glacé cherries

425g (15oz) tin of apricots

150g (5oz) butter

120g (4.5oz) caster sugar

2 large eggs

2 tbs milk

110g (4oz) sultanas

110g (4oz) raisins

110g (4oz) currants

 

 

1. Sieve flour and salt together.

 

2. Halve cherries. Roll in flour.

 

3. Drain apricots and chop finely.

 

4. Cream butter and sugar.

 

5. Beat in eggs one at a time adding a tablespoon of flour.

 

6. Fold in flour, milk and all the fruit.

 

 

23cms (9 inch) square cake tin, lined.

Cooking time:  2hrs at 160C/325For Gas Mark 3.

To be kept in fridge as this is a moist cake.
